Halwa: Lentils Done Right

Recently over lunch at Shiva’s in Mountain View, my friend Manish Chandra introduced me to a delicious dessert called Moong Ki Dal Ka Halwa. Well known to people familiar with Indian cuisine but new to me, the dish is a blend of lentils, milk, sugar, and spices. While moving through Shiva’s lunch buffet, my eyes had moved quickly over the unfamiliar golden brown paste garnished with almond slices, but Manish spotted it and convinced me that it was a must-try – when done well, it’s one of his favorite foods. Happily, he pronounced Shiva’s halwa to be excellent. Who knew that lentils could taste so good!
